Simple, Yummy Stir Fry

Simple Stir FryMy weight has been continuing to increase, and while it is easy to blame middle-age, I do not. I actually really don't believe that you should get fat after forty. I think it's all in the mind. Seriously. Because - frankly - I eat too much, drink too much, and just don't move enough. Once I realized - and accepted - this, I could see that a life-style change was in order.

Part of that shift includes MORE. More vegetables, more real foods. So, yesterday, I made a really yummy (but totally simple) stir fry with steak, broccoli, mushrooms, baby spinach, onions and garlic, and used Chinese Soy Sauce for the flavour.

I'm not really going to list all the ingredients here, because, basically, this is a "use up veggies that won't keep any longer" recipe. Throw in any veggies you have, use any meat you have (or, don't even use meat), and voila.

Ok, so here's the basics.

  1. Heat up your wok, or a large frying pan if you don't have a wok
  2. Add a splash of olive oil (or coconut oil) (like one or two tablespoons)
  3. Add the soy sauce (or tamari, or whatever you decide to use for flavour)
  4. Sear the meat, and then add the onions.
  5. Stir for a minute or two
  6. Add  any veggies that take a bit longer to cook (like eggplant, carrots, etc)
  7. Add faster cooking veggies, like spinach and mushrooms
  8. Add more flavour from your sauce if desired
  9. Serve over rice, or over shredded lettuce if you're cutting back on carbs!
