Since I've been on holiday for the past two weeks, I've spent some time getting some much needed rest, and also doing some relaxing cooking!
Most recently, I made a simple and tasty carrot soup.
So easy, so simple.
Ingredients:
1 tbsp of butter
1 small onion, chopped
2 medium potatoes, cut up
7 medium carrots (basically, a 3:1 ratio to the potatoes) cut small
8 cups of water with 3 bouillon cubes (or, use chicken broth of choice)
1 1/2 tsp ground ginger
salt and pepper to taste
Directions:
Heat a pot and gently fry the onion in butter. When it's tender, add all other ingredients.
Simmer until the potatoes and carrots are tender.
Remove from heat, use an immersion blender to puree to taste. Add salt and pepper to taste.
Done!
