Pasta is a great favourite of mine. Despite my conviction that carbs are bad, I love them. They're also cheap and versatile. My mother had made a lovely meat sauce a while back, which we froze, then took out to reuse recently. But of course, as often happens with pasta, we cooked too many noodles. I usually put the noodles in a baggie and stick them in the freezer for future use, but there really wasn't that much left over this time. Instead of just tossing the noodles in the trash, I made a really tasty and light side dish, which I served as a side to M&M Meat Shop Jumbo Chicken Wings.
The Spaghetti Side Dish
Ingredients:
- Some (1 bowl?) of already cooked spaghetti noodles
- 2 tbs of Olive Oil
- 1/4 cup Parmesan cheese
- 1/2 tsp crushed garlic ( I used the one in the jar)
- 1 or 2 shallots (green onion)
- 1 tsp or so of parsley
- salt and pepper to taste
Directions:
Heat the oil in a large pan or a medium pot (I use my large, deep T-Fal pan for most things)
Add the noodles, garlic, shallots, parsley, and cheese, mixing well as it heats up.
Add more of whatever as you like - I really just threw this together, tweaking as I went.
Finish with salt and pepper to taste.
