Pre-made Lunches for the Week

Part of trying to get healthy involves eating less processed food, and more real food. Actually, I'm really not too bad in this department, honestly. Aside from the occassional Kraft Dinner treat or Hamburger Helper meal, I tend to cook all my meals. But sometimes it's tough to make sure I have something on hand for those days I work. You see, I don't have a set schedule, some days I work full on, some days only half a day, or with a big enough break to come home for lunch. And some days, sadly, I don't work at all. So, I need to have fun, yummy, easy to heat up food for all the week days and those just-in-case days.So, in addition to going to Jivka's yesterday for lunch, I spent my morning cooking two nice dishes for the upcoming week. I did a beef and broccoli stir fry, and madras chicken curry!

Beef and Broccoli stir fry

I used strips of beef, a bunch of frozen broccoli, some mushrooms and an onion. I fried up the onion in sesame oil. I think sesame oil here is the key, as it adds most of the flavour. Then I fried the meat, added about 2 cups of water, some soy sauce (maybe 1 cup?), and corn starch to thicken the sauce, and let it cook til I was satisfied with the texture and tenderness of the broccoli! Voila.















The Chicken Curry was also quick and easy, since I used a jar of Patak's Madras paste (actually, half a jar). I followed the directions on the jar, but used chicken thigh instead of beef. It took about 45 minutes to cook. Super easy, super spicy, super yummy.




Both these dishes keep well in the fridge, and both freeze very well, so if I don't use them by Wednesday, I'll pop them in the freezer to enjoy at a later date.
