Bread Maker Bagels Recipe


Since I bought my bread maker (for $5!!) at the Great Glebe Garage sale two weeks ago, I've made a plain white bread, a raisin bread and pizza dough, all of which worked out really well. And today, I made bagels!! Yay, me :)

And, yes, the bagels worked out AMAZING!

I followed a pretty basic recipe for a 1.5lb bread maker.

Here it is;

Ingredients:

  1. 1 cup warm water (warm water helps with the yeast / rising )
  2. ½, tbl Sugar, plus 2 more tbl for later
  3. 1 tsp Salt
  4. 3 cups bread flour
  5. ¼, tsp active dry yeast, or  ½, tsp quick rise yeast
  6. 1 egg, beaten, to glaze


Directions:

  • Put everything in your bread maker; the order I listed everything is generally the order recommended by the manufacturer. The yeast shouldn't hit the salt til later, that's why it's on top of the flour. 
  • Spread the flour out into the corners of the maker, so it's not just a big tee-pee.
  • Set your machine to the Dough setting. My machine takes 1 hour and 20 minutes to do the dough. 
  • Important!! Remove the dough as soon as the machine beeps (at the end), because it will need to continue to rise.
  • On a lightly floured surface, like a cutting board, separate your dough into 8 to 10 balls (I got 8 decent sized/ kinda big bagels). Dig a hole in the middle of each ball and stretch it out to make a nice sized bagel hole. 
  • Set your raw bagels on a greased baking pan and cover with a towel, and let sit for about 30 minutes to continue rising.
  • Pre-heat your oven to 400 F. 
  • Boil a pot of water (about 6 cups would do it) and 2 tbl of sugar in a large pot. Boil your bagels in small batches (my pot could do three at a time). Place a two or three bagels at a time into the boiling water for three minutes, turning them over once. Remove the bagels, setting them on a towel briefly to let the excess water drip away. 
  • Place them back on the baking sheet, and brush with egg to glaze them. If you want poppy seeds or sesame or whatever, sprinkle it on top of the egg glaze.
  • Bake at 400 F for 20 or 25 minutes (until browned). 


These bagels turned out GREAT! I'll be making them again, and getting adventures with raisins and sesame and stuff, too.
