But I don't love it, and so I really never bothered to make a salad. It was too much effort (all that cutting up of lettuce and tomatoes and whatever) for too little reward.
And then, I found it - a really enticing salad, one I loved to eat. I was at my friend, JK's , house where she was making a light lunch for us, including salad. I liked it so much, I asked her what was in it?
"Nothing," she said, "Just the vegetables and some salt and olive oil."
The trick, she added, was to cut everything up very small. Well, that was the best darn salad I'd ever had. Seriously. In fact, I've been eating it almost daily since then.
Being a simple cook, this is a simple salad.
Here's my simple salad recipe.

Tip: Make it ahead and let it warm up to room temperature, or at least so it isn't too cold. It tastes better that way. And again, the real trick is to cut everything up quite small. I think that must make the flavours flow better.
- 1 bag of pre-washed salad of your choice, chopped up small (I use whatever is on sale - Dole's iceberg mix is fine, Italian blend is nicer but pricier. Alternatively, you can just use a head of lettuce of your choice).
- Cherry or grape tomatoes in the quantity you desire, quartered (or just cut up small)
- Cucumber, partially peeled and cut up small
- 2 or 3 Shallots (aka green onion) cut up small
- 2 or 3 radishes (or more if you want, of course) cut up small
Cover the bowl and shake it to mix up the vegetables. Let sit to get to room temperature. Put individual servings in bowls when ready, add a dash of salt to taste and one or two tablespoons of Extra Virgin Olive Oil.
When adding the salt and the oil, the amounts really depend on personal taste. I like a bit of salt and a little oil, my mother likes even less salt but a lot more oil. Start with less and add more as desired.
